Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste

Glaze

  • 1 cup apple cider
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 sprig fresh thyme (or 1 teaspoon dried thyme)

Instructions

  1. Season Chicken: Pat the chicken breasts dry and season both sides generously with salt and pepper to enhance flavor.
  2. Sear Chicken: Heat olive oil in a large skillet over medium-high heat. Once hot, add chicken breasts and sear each side for 4-5 minutes until golden brown. Remove chicken from skillet and set aside.
  3. Sauté Aromatics: In the same skillet, add finely chopped onion and minced garlic. Sauté until fragrant and the onion is translucent, about 2-3 minutes.
  4. Prepare Glaze: Pour in apple cider, apple cider vinegar, honey, and Dijon mustard. Add the thyme sprig, stir well, and allow the mixture to simmer gently for 5 minutes to blend flavors.
  5. Cook Chicken in Glaze: Return the seared chicken breasts to the skillet, spoon some glaze over them, cover the pan, and cook for 10-12 minutes until the chicken is completely cooked through (internal temperature of 165°F/75°C).
  6. Reduce Glaze: Remove the cooked chicken from the skillet. Increase the heat and simmer the glaze for a few more minutes until it thickens slightly to a syrupy consistency.
  7. Serve: Drizzle the thickened apple cider glaze over the chicken breasts and serve immediately for a flavorful and juicy dish.

Notes

  • You can use dried thyme if fresh thyme is unavailable; just reduce the amount to one teaspoon.
  • Ensure chicken is cooked fully by checking internal temperature with a meat thermometer.
  • Serve with roasted vegetables or mashed potatoes for a complete meal.
  • Leftover glaze can be refrigerated and used as a sauce for other dishes within 2 days.
