Filling
- 12 ounces (from 3 medium) Hass avocados, cubed
- Juice from 1–2 small limes
- ¼ cup chopped sundried tomatoes (packed in oil, drained)
- 2/3 cup diced red onion
- 1/3 cup chopped cilantro
- 1 teaspoon kosher salt
- Freshly ground black pepper, to taste
Assembly
- 10 egg roll wrappers
- Small bowl of water (for sealing wrappers)
- Olive or canola oil spray (for cooking)
Dipping Sauce
- 2 tablespoons mayonnaise
- 1 tablespoon sweet chili sauce
- A few dashes of sriracha (plus more to taste)
- Prepare the filling: In a medium bowl, combine the cubed avocado, lime juice, chopped sundried tomatoes, diced red onion, chopped cilantro, kosher salt, and freshly ground black pepper. Gently toss until all ingredients are evenly mixed, taking care not to mash the avocado too much.
- Shape the egg rolls: Lay one egg roll wrapper on a clean surface with the points facing up and down, forming a diamond shape. Spoon approximately ¼ cup of the avocado mixture onto the bottom third of the wrapper.
- Moisten and fold: Dip your finger into a small bowl of water and carefully run it along the edges of the wrapper to act as glue. Lift the bottom point closest to you and fold it up over the filling. Fold in both the left and right corners towards the center, then roll tightly into a cylinder shape, sealing the edge. Repeat with all wrappers and filling.
- Prepare for cooking: Lightly spray all sides of the assembled egg rolls with olive or canola oil to help them crisp up during cooking.
- Cook in the air fryer: Preheat your air fryer to 400°F. Place egg rolls in batches inside the basket, ensuring they do not touch. Cook for 6 minutes, flipping halfway through cooking, until they are golden brown and crispy.
- Alternatively, bake in the oven: Preheat the oven to 400°F and spray a baking sheet with oil. Arrange the egg rolls on the sheet and bake for 16 to 18 minutes, turning halfway, until browned and crisp.
- Make the dipping sauce: In a small bowl, mix together mayonnaise, sweet chili sauce, and dashes of sriracha to your preferred spice level. Serve alongside the warm egg rolls for dipping.
