Baked Cheddar Cauliflower is a comforting and cheesy side dish that combines tender cauliflower florets with a rich, creamy cheddar cheese sauce. Topped with optional crunchy breadcrumbs and Parmesan, it’s a flavorful delight perfect for family dinners or holiday meals.

Ingredients

Scale

Main Ingredients

  • 1 large head of cauliflower (about 2 pounds), cut into florets
  • 2 cups shredded sharp cheddar cheese
  • 1 cup milk (whole or 2%)
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 teaspoon paprika

Optional Add-ons

  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • Chopped fresh herbs like parsley or chives (for garnish)
  • Cooked bacon bits (for smoky flavor)
  • 1/2 teaspoon cayenne pepper (for spice)

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) and position the oven rack in the middle to ensure even baking.
  2. Prepare the Cauliflower: Cut the cauliflower into bite-sized florets using a sharp knife, rinse them under cold water, and pat dry.
  3. Make the Cheese Sauce: In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes until bubbly and golden. Gradually add milk while whisking to avoid lumps, then cook until thickened. Remove from heat and stir in shredded cheddar until smooth. Season with garlic powder, onion powder, paprika, salt, and pepper.
  4. Combine and Bake: Toss the cauliflower florets with the cheese sauce until well coated. Transfer to a greased baking dish and spread evenly. If using, sprinkle breadcrumbs and Parmesan on top. Bake for 25-30 minutes until the cauliflower is tender and the top is golden brown.
  5. Garnish and Serve: Optionally, garnish with chopped fresh herbs or cooked bacon bits. Serve warm for the best cheesy goodness experience.

Notes

  • For a creamier sauce, use whole milk rather than skim.
  • Fresh sharp cheddar cheese enhances the flavor compared to pre-shredded varieties.
  • Adjust seasoning to taste, especially salt and paprika.
  • Breadcrumbs and Parmesan topping adds a delightful crunch but can be omitted for a softer texture.
  • This dish can be prepared ahead and baked just before serving.
  • Customize with spicy cayenne or smoky bacon bits based on preference.
