Instructions

  1. Preheat the oven: Preheat your oven to 375°F (190°C) to get it ready for baking the eggs and vegetables together.
  2. Heat olive oil and sauté onion: Place a medium-sized skillet or ovenproof dish over medium heat, add olive oil, and sauté the finely chopped red onion for about 2 minutes until it becomes soft and translucent.
  3. Add garlic and bell pepper: Stir in the minced garlic and diced red bell pepper, cooking for another 2 minutes until the bell pepper starts to soften.
  4. Cook tomato: Add the diced tomato to the skillet and stir well, cooking for 3-4 minutes until the tomato softens and the mixture thickens slightly.
  5. Add feta and seasonings: Spread the crumbled feta cheese evenly over the vegetable mixture, then sprinkle the dried oregano, salt, and black pepper on top.
  6. Create wells and add eggs: Make four small wells in the mixture and carefully crack one egg into each well.
  7. Bake in oven: Transfer the skillet or ovenproof dish to the preheated oven and bake for 10-12 minutes or until the egg whites are set and yolks reach your preferred doneness.
  8. Cool and garnish: Remove from the oven and let the dish cool slightly before garnishing with freshly chopped parsley.
