Ingredients

Scale

Base

  • 16 oz full-fat cream cheese (450g), softened to room temperature
  • 2 tablespoons creamy sour cream or tangy Greek yogurt
  • 1 tablespoon pickle juice from the jar

Cheese & Pickle Mixture

  • 1 cup finely shredded sharp Cheddar cheese (65g)
  • 1 cup finely chopped dill pickles (145g)
  • 2 green onions, finely chopped
  • 2 tablespoons fresh chopped dill
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • ½ teaspoon sweet paprika powder
  • ½ teaspoon fine sea salt or kosher salt
  • ¼ teaspoon freshly ground black pepper

Coating

  • ½ cup finely chopped Cheddar cheese (55g)
  • 1 tablespoon fresh chopped dill
  • 2 teaspoons toasted sesame seeds

Instructions

  1. Mix the Base: In a large bowl, beat the softened cream cheese until smooth and creamy. Add the sour cream and pickle juice, blending until the mixture is silky and perfectly combined.
  2. Add the Flavors: Fold in the chopped dill pickles, green onions, shredded sharp Cheddar cheese, fresh dill, Dijon mustard, garlic powder, sweet paprika, salt, and freshly ground black pepper. Mix thoroughly so that all ingredients are evenly distributed throughout the cream cheese base.
  3. Shape and Chill: Transfer the mixture onto a large piece of plastic wrap. Gather the edges of the wrap around the mixture and twist to form a tight ball. Smooth the surface using the plastic wrap. Place the cheese ball in the refrigerator and chill for at least 3 hours or preferably overnight, allowing the flavors to meld and develop.
  4. Final Touch: When ready to serve, combine the finely chopped Cheddar cheese, fresh chopped dill, and toasted sesame seeds on a plate. Remove the chilled cheese ball from the plastic wrap and gently roll it in the coating mixture until it is completely covered in the cheesy and herby coating. Serve chilled with crackers, sliced vegetables, or bread.

Notes

  • For best results, prepare the cheese ball a day in advance to allow flavors to fully develop overnight.
  • Use full-fat cream cheese for a richer and creamier texture.
  • Pickle juice adds tanginess and helps soften the cheese ball, so don’t skip it.
  • Adjust seasoning amounts to taste, especially salt, depending on the saltiness of your pickles and cheese.
  • Store leftover cheese ball tightly wrapped in the refrigerator and consume within 3-4 days.
  • To make the coating extra crunchy, consider adding crushed nuts or seeds if desired.
