Ingredients

Scale

Chicken and Filling

  • 4 boneless skinless chicken breasts
  • 2 cups broccoli florets, chopped
  • 1 cup shredded cheddar cheese
  • 4 ounces cream cheese, softened
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Topping

  • 1/2 cup breadcrumbs
  • 2 tablespoons melted butter

Other

  • 1 tablespoon olive oil

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) to prepare for baking the stuffed chicken breasts.
  2. Prepare the Filling: In a mixing bowl, combine chopped broccoli, shredded cheddar cheese, softened cream cheese, garlic powder, onion powder, salt, and black pepper. Mix thoroughly until all ingredients are well incorporated.
  3. Prepare the Chicken: Using a sharp knife, carefully cut a pocket into the side of each chicken breast, making sure not to cut all the way through, to create space for the filling.
  4. Fill each Pocket: Stuff each chicken breast pocket evenly with the broccoli and cheese mixture, ensuring a generous amount inside.
  5. Secure the Filling: If needed, use toothpicks to close the opening of each stuffed chicken breast to prevent the filling from spilling out during cooking.
  6. Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the stuffed chicken breasts and sear for 2-3 minutes on each side until they develop a golden-brown crust.
  7. Prepare the Topping: In a small bowl, combine the breadcrumbs with melted butter and mix until the breadcrumbs are evenly coated with butter.
  8. Bake the Chicken: Transfer the seared stuffed chicken breasts into a baking dish. Evenly sprinkle the breadcrumb mixture on top of each breast. Bake in the preheated oven for 25 to 30 minutes, or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through.
  9. Serve: Let the chicken rest for a few minutes after baking to retain juices. Serve warm alongside rice or your choice of vegetables.

Notes

  • Using toothpicks helps keep the filling secure while cooking.
  • You can substitute cheddar with other melty cheeses like mozzarella or Monterey Jack.
  • Make sure the chicken is fully cooked by checking with a meat thermometer.
  • For extra flavor, consider adding chopped herbs like parsley or thyme to the filling.
  • Leftover stuffed chicken breasts can be stored in an airtight container in the refrigerator for up to 3 days.
