Creme Filling

  • 1 cup light corn syrup
  • 1/2 cup butter, softened
  • 2 tsp vanilla extract
  • 6 cups powdered sugar
  • 1/2 tsp salt
  • 2 Tbsp milk

Coloring

  • 2 drops orange gel food coloring
  • 1 drop yellow gel food coloring

Instructions

  1. Prepare Muffin Cups: Line 48 mini muffin cups with parchment paper liners to prevent sticking and ensure easy removal of the creme bites.
  2. Melt Chocolate: In a microwave-safe bowl, microwave 16 ounces of milk chocolate on HIGH power for 30 seconds. Stir thoroughly, then continue melting in 20-second increments, stirring after each, until the chocolate is fully melted and smooth.
  3. Form Chocolate Base: Pour the melted chocolate into a piping bag. Snip off the tip and pipe a thin layer of chocolate into the bottoms of the lined muffin cups. Gently tap the pan on the counter to evenly distribute the chocolate. Save any extra chocolate for re-melting.
  4. Make White Creme Filling: In a stand mixer bowl, beat softened butter and light corn syrup until combined. Add milk, vanilla extract, and salt, mixing well. Gradually add powdered sugar, mixing thoroughly after each addition until the mixture becomes stiff. Transfer about two-thirds of this white creme mixture into a piping bag.
  5. Color and Prepare Orange Creme: To the remaining one-third of the creme mixture, add 2 drops of orange and 1 drop of yellow gel food coloring. Mix well until the creme turns a consistent orange color. Place this orange creme into a separate piping bag.
  6. Pipe White Creme Layer: Cut the tip off the white creme piping bag to about 1/2-inch diameter. Pipe a thick layer of white creme on top of the set chocolate base in each muffin cup.
  7. Pipe Orange Creme Center: Cut the orange creme piping bag tip to about 1/4-inch diameter. Pipe the orange creme onto the center of each white creme layer. Tap the muffin pan gently to smooth out the layers. Allow the creme to sit a bit longer for a more even top.
  8. Remelt Remaining Chocolate: Add the remaining 16 ounces of milk chocolate to the bowl with any leftover chocolate and re-melt it in the microwave using 20-second increments until smooth.
  9. Add Chocolate Top Layer: Pour the re-melted chocolate into a clean piping bag and pipe over the creme layers in each cup, ensuring the chocolate covers the creme edges completely. Tap the pan to smooth the chocolate tops.
  10. Chill and Set: Refrigerate the filled cups for 30 minutes or until the chocolate is completely set and firm.
