Instructions

  1. Melt Butter and Make Roux: Melt the butter in a medium skillet over medium heat. Whisk in the flour until smooth to create a roux, which will thicken the sauce.
  2. Add Seasonings: Stir in the finely minced garlic, salt, dried parsley, dried oregano, and pepper. Cook for 1 minute to release the flavors.
  3. Whisk in Liquids and Cheese: Slowly add the low sodium chicken broth and heavy cream while whisking to maintain smoothness. Continue cooking over medium heat, whisking frequently, until the mixture thickens and becomes smooth. Then stir in 3 tablespoons of Parmesan cheese and ½ cup of shredded mozzarella. Set aside to cool slightly.
  4. Prepare Cream Cheese Mixture: In a medium bowl, beat the cream cheese with an electric mixer until smooth and creamy. Gradually beat in the Alfredo sauce until fully combined and smooth. Fold in the cooked, chopped chicken. Taste and adjust seasonings if needed.
