Instructions

  1. Prepare the Chicken: Heat the olive oil in a large skillet over medium-high heat. Season the chicken breasts generously with salt, black pepper, and dried thyme on both sides. Add the chicken to the hot skillet.
  2. Cook the Chicken: Sear the chicken breasts for 5-6 minutes per side until golden brown and cooked through, reaching an internal temperature of 165°F (75°C). Remove the chicken from the pan and let it rest before slicing it into thin strips or bite-sized pieces.
  3. Prepare the Noodles: While cooking the chicken, bring a large pot of salted water to a boil. Add the egg noodles and cook according to package instructions until al dente. Drain the noodles, reserving about ½ cup of the pasta cooking water for later use.
  4. Make the Butter Sauce: Reduce the skillet heat to medium and add the butter, allowing it to melt while scraping up any browned bits from the pan. Add the minced garlic and sauté for about 1 minute until fragrant, making sure not to burn it. Pour in the chicken broth and bring to a simmer, letting it reduce slightly for 3-4 minutes. Stir in the heavy cream and simmer for another 3-4 minutes until the sauce thickens slightly.
  5. Combine the Noodles and Chicken: Add the cooked noodles to the skillet, tossing gently to coat them evenly with the butter sauce. If the sauce is too thick, add a little of the reserved pasta water to loosen it. Return the sliced chicken to the skillet and toss everything together so the chicken absorbs the flavorful sauce.
