Chicken Scampi:

  • 1 pound boneless, skinless chicken breasts or tenders, cut into strips

  • 4 tablespoons unsalted butter, divided
  • 4 garlic cloves, minced
  • 1/4 cup white wine or chicken broth
  • 2 tablespoons lemon juice
  • 2 tablespoons chopped fresh parsley

Garlic Parmesan Rice:

  • 1 cup long grain white rice
  • 2 1/4 cups chicken broth
  • 2 tablespoons unsalted butter
  • 2 garlic cloves, minced
  • 1/3 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Prepare and Cook Chicken: In a large skillet, heat olive oil and 2 tablespoons butter over medium-high heat. Season chicken strips with salt, pepper, and Italian seasoning. Sauté the chicken until golden brown and cooked through, about 6–8 minutes. Remove chicken from skillet and set aside.
  2. Make Sauce: In the same skillet, add the remaining 2 tablespoons of butter and minced garlic. Cook for 1 minute until fragrant. Deglaze the pan by adding white wine or chicken broth, scraping up browned bits. Stir in lemon juice and let the sauce simmer for 2–3 minutes.
  3. Combine Chicken and Sauce: Return the cooked chicken to the skillet and toss to coat in the sauce. Heat through for a minute, then sprinkle chopped fresh parsley over the top.
  4. Cook Garlic Parmesan Rice: While the chicken is cooking, melt 2 tablespoons butter in a saucepan over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add the rice and toast it by stirring continuously for 2 minutes.
  5. Simmer Rice: Pour in chicken broth and bring to a boil. Reduce heat to low, cover the saucepan, and simmer for 18–20 minutes, or until the rice is tender and liquid is absorbed.
  6. Finish Rice: Stir grated Parmesan cheese into the cooked rice. Season with salt and pepper to taste.
  7. Serve: Plate the garlic Parmesan rice and top it with the chicken scampi. Garnish with additional parsley if desired and serve immediately.
