Main Ingredients
- 1 (13.5 oz) can chickpeas, drained and rinsed
- 1/2 cup nut or seed butter (almond or cashew butter recommended)
- 1 cup vegan dark chocolate chips (melted)

- Prepare Chickpeas and Melt Chocolate: Drain and rinse one can of chickpeas thoroughly. Melt 1 cup of vegan dark chocolate chips either in the microwave in short bursts or over a double boiler on the stovetop until smooth.
- Blend Ingredients: Place the chickpeas, 1/2 cup nut or seed butter, and melted chocolate chips into a food processor or blender. Blend for 45-60 seconds until the mixture is smooth and well combined.
- Shape Truffles: Using a cookie scoop, portion the batter onto a baking sheet lined with parchment paper. Freeze them for 15-20 minutes to partially harden. Remove from the freezer and roll each portion into smooth balls, then return them to the freezer for an additional 10 minutes to firm up.
- Melt Coating Chocolate: While the truffles chill, melt the remaining 1 cup of vegan dark chocolate chips with 1 tablespoon of coconut oil until smooth for the coating.
- Coat Truffles: Remove the truffles from the freezer and dip each ball into the melted chocolate coating until fully covered. Place them back on the parchment-lined baking sheet.
- Add Toppings: Optionally sprinkle your desired toppings such as cacao nibs, goji berries, sprinkles, shredded coconut, nuts, or freeze dried fruits onto the coated truffles before the coating sets.
