Instructions

  1. Prepare Chickpeas and Melt Chocolate: Drain and rinse one can of chickpeas thoroughly. Melt 1 cup of vegan dark chocolate chips either in the microwave in short bursts or over a double boiler on the stovetop until smooth.
  2. Blend Ingredients: Place the chickpeas, 1/2 cup nut or seed butter, and melted chocolate chips into a food processor or blender. Blend for 45-60 seconds until the mixture is smooth and well combined.
  3. Shape Truffles: Using a cookie scoop, portion the batter onto a baking sheet lined with parchment paper. Freeze them for 15-20 minutes to partially harden. Remove from the freezer and roll each portion into smooth balls, then return them to the freezer for an additional 10 minutes to firm up.
  4. Melt Coating Chocolate: While the truffles chill, melt the remaining 1 cup of vegan dark chocolate chips with 1 tablespoon of coconut oil until smooth for the coating.
  5. Coat Truffles: Remove the truffles from the freezer and dip each ball into the melted chocolate coating until fully covered. Place them back on the parchment-lined baking sheet.
  6. Add Toppings: Optionally sprinkle your desired toppings such as cacao nibs, goji berries, sprinkles, shredded coconut, nuts, or freeze dried fruits onto the coated truffles before the coating sets.
