Cinnamon Swirl

  • 1/4 cup Melted Vegan Butter
  • 1/2 cup Light Brown Sugar
  • 1 tablespoon Cinnamon

Frosting (Optional)

  • 1 cup Powdered Sugar
  • 1/4 cup Melted Vegan Butter
  • 1/4 cup Softened Vegan Cream Cheese

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a loaf pan thoroughly to prevent sticking.
  2. Prepare Wet Ingredients: In a large bowl, mash the overripe bananas until smooth. Add the melted vegan butter, maple syrup, almond or oat milk, and vanilla extract. Mix until the batter is creamy and well combined.
  3. Add Leavening and Spices: Sprinkle in the baking powder, baking soda, cinnamon, and salt over the wet ingredients. Stir gently until just combined to avoid overmixing.
  4. Incorporate Dry Ingredients: Gradually add the all-purpose flour and rolled oats to the wet mixture. Stir until no dry flour remains, but a few streaks are okay to keep the batter tender.
  5. Prepare Cinnamon Swirl Mixture: In a small bowl, combine melted vegan butter, light brown sugar, and cinnamon until smooth and well mixed.
  6. Assemble the Bread: Pour half of the banana batter into the greased loaf pan and smooth the surface. Spoon half of the cinnamon swirl mixture over the batter and use a knife to create swirls.
  7. Add Remaining Batter and Swirl: Pour the remaining batter over the cinnamon swirl layer. Spoon the remaining cinnamon swirl mixture on top and swirl again carefully with a knife.
  8. Bake: Place the loaf pan in the preheated oven and bake for 50 to 60 minutes. Check for doneness starting at 50 minutes by inserting a toothpick; it should come out clean or with a few moist crumbs.
  9. Cool: Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  10. Prepare Frosting: While the bread cools, mix the powdered sugar, melted vegan butter, and softened vegan cream cheese until smooth and creamy for the optional frosting. Spread over the cooled banana bread before serving.
