Instructions

  1. Prepare Ingredients: Ensure the cream cheese or coconut butter and butter (or additional coconut butter) are brought to room temperature to make mixing easier and achieve a smooth texture.
  2. Mix Ingredients: Combine the softened cream cheese or coconut butter, butter, powdered sugar or erythritol, and instant coffee until smooth. Using a hand mixer gives the best results for a silky consistency, although mixing by hand with a fork is acceptable and still tastes delicious.
  3. Shape Truffles: Spread the mixture into a container or freeze briefly until firm enough to scoop. Use a mini cookie scoop to form balls and place them onto a parchment-lined plate. Freeze the shaped balls until they harden completely.
  4. Optional Chocolate Dipping: If desired, melt the chocolate chips with optional oil stirred in for a smoother sauce. Dip the truffles into the melted chocolate and let set. For the truffle bites shown in photos, cut the chocolate-coated truffles in half as soon as the chocolate solidifies.
