Ingredients

Scale

Egg Mixture

  • 8 large eggs
  • 1 cup cottage cheese (0% – 2% fat recommended)
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder

Cheese

  • ½ cup shredded cheese (cheddar or feta)

Optional Mix-ins (up to 1 cup total)

  • Chopped fresh spinach
  • Diced bell peppers
  • Broccoli florets
  • Cooked sausage
  • Diced ham

Instructions

  1. Preheat & Prepare: Preheat your oven to 350°F (175°C) and grease a silicone muffin tray thoroughly to prevent sticking and ensure easy removal of the egg bites.
  2. Blend the Base: In a blender, combine the eggs, cottage cheese, salt, black pepper, garlic powder, and onion powder. Blend the mixture until it is completely smooth and creamy, ensuring evenly distributed flavors and a light texture.
  3. Fill the Cups: Pour approximately ¼ cup of the blended egg mixture into each muffin cavity, filling them evenly to promote uniform cooking.
  4. Customize the Flavor: Add your chosen optional mix-ins such as chopped spinach, bell peppers, broccoli, cooked sausage, or ham to each filled muffin cup. Stir gently to combine, then sprinkle shredded cheese on top. Add extra cheese on top if desired for a golden finish.
  5. Bake to Perfection: Place the muffin tray in the oven and bake for 18-22 minutes, or until the centers of the egg bites are just set and a toothpick inserted comes out clean. Let the egg bites cool for a few minutes before removing them carefully from the tray.
