Ingredients

Scale

Pastry

  • 6 sheets frozen filo pastry, thawed
  • 50 g butter, melted
  • 1 tablespoon black sesame seeds

Filling

  • 250 g brie, cut into long slices
  • 275 g cranberry sauce
  • ¼ cup flaked almonds

Instructions

  1. Preheat Oven: Preheat your oven to 180°C (350°F) and line two baking trays with parchment paper to prevent sticking.
  2. Prepare Filo Sheets: Lay the thawed filo sheets flat on a clean surface. Cut each sheet into 3 strips lengthwise, then cut those strips in half widthwise to create 36 even squares. Cover the remaining sheets with a damp towel to keep them from drying out.
  3. Assemble Crackers: Take one filo square and brush it evenly with melted butter. Place a slice of brie, about one teaspoon of cranberry sauce, and one teaspoon of flaked almonds at one end of the square. Carefully roll the filo square over the filling and pinch the ends to seal and form cracker shapes. Repeat this process for all filo squares.
  4. Prepare for Baking: Arrange the assembled filo crackers on the prepared baking trays. Brush the tops with the remaining melted butter to help them brown nicely. Sprinkle black sesame seeds evenly over the crackers for added flavor and crunch.
  5. Bake: Bake in the preheated oven for 15 to 20 minutes or until the filo pastry turns golden brown and crisp.
  6. Garnish and Serve: Once baked, optionally garnish the crackers with fresh rosemary leaves or finely chopped chives for a fragrant, elegant finish. Serve warm or at room temperature.

Notes

  • Keep unused filo sheets covered with a damp cloth to prevent drying out during assembly.
  • The crackers can be assembled ahead of time and refrigerated before baking; just add a few extra minutes to the baking time if baking straight from chilled.
  • Substitute brie with camembert or cream cheese for a different flavor.
  • For a more festive look, try using chopped pistachios instead of almonds.
  • Make sure to seal the ends of the crackers well to prevent the filling from leaking during baking.
