Ingredients

Scale

Beef

  • 2 lbs beef stew meat

Gravy and Sauce

  • 1 (1 oz) packet dry onion soup mix
  • 2 cups beef broth
  • 3 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 3 tbsp cornstarch
  • 3 tbsp minced garlic
  • ½ tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Prepare the Beef: Pat the stew meat dry with paper towels to remove any excess moisture, which helps the beef brown better and ensures a thicker gravy.
  2. Place in Slow Cooker: Add the dried beef stew meat into a 6-quart slow cooker, spreading it evenly.
  3. Mix the Seasonings: In a medium bowl, whisk together the beef broth, dry onion soup mix, dried thyme, minced garlic, ketchup, Worcestershire sauce, cornstarch, salt, and pepper until evenly combined and smooth.
  4. Combine Ingredients: Pour the seasoning mixture over the beef in the slow cooker, making sure each piece of meat is well coated with the sauce mixture.
  5. Cook Low and Slow: Cover the slow cooker with the lid and cook on low heat for 7 to 8 hours, allowing the beef to become tender and the gravy to thicken naturally during the slow cooking process.
  6. Serve: Once cooked, stir the beef tips and gravy gently, then serve hot over mashed potatoes, rice, or egg noodles for a comforting and hearty meal.

Notes

  • For thicker gravy, remove the lid for the last 30 minutes of cooking to allow some liquid to evaporate.
  • You can substitute the beef stew meat with sirloin tips or chuck roast cut into cubes.
  • Adjust seasoning with additional salt and pepper if needed before serving.
  • This recipe can be made ahead and reheated gently on the stove or in the slow cooker.
  • Adding mushrooms or sliced onions can add extra flavor and texture.
