Ingredients

Scale

Main Ingredients

  • 1 cup banana chips (see notes for substitute)
  • ½ cup pecans or walnuts (chopped or halved)
  • ¾ to 1 cup almond flour (depending on the type of nut butter you use)
  • ⅓ cup almond butter (no stir works best)
  • 1 tbsp cinnamon
  • ½ tsp nutmeg
  • Pinch of salt
  • 1 tsp vanilla extract
  • ¼ cup honey (or maple syrup if vegan)
  • 12 tablespoons Bourbon (use Hudson Bourbon for gluten-free)

For Rolling

  • Coconut sugar
  • Additional cinnamon and spices

Instructions

  1. Grind banana chips: Lightly grind banana chips in a food processor, being careful not to over-process to maintain pleasant texture.
  2. Combine dry ingredients: Transfer ground banana chips to a mixing bowl. Add almond flour, cinnamon, nutmeg, salt, and chopped or halved pecans or walnuts. Stir all together evenly.
  3. Add almond butter and sweetener: Incorporate almond butter into the dry mix, stirring to combine well. Gradually add honey or maple syrup a little at a time, mixing with a spoon or your hands. If the batter feels too runny, add more almond flour to achieve a firm, moldable consistency.
  4. Add bourbon and vanilla: Pour in bourbon and vanilla extract. Mix thoroughly with hands until the batter is homogenous and slightly sticky.
  5. Chill the batter: Place the batter in the fridge for 30 minutes or in the freezer for 10 minutes to let it firm up for easier shaping.
  6. Shape the bites: Once chilled, roll the batter into 1 to 1.5 inch balls. Arrange them on a cookie tray or plastic ware lined with parchment paper.
  7. Freeze the bites: Freeze the balls for 20 to 30 minutes to set completely.
  8. Coat and store: Dust the frozen bites with additional cinnamon and coconut sugar or spices if desired. Transfer them to a sealed container. Store in the refrigerator or freezer for up to 6 weeks.

Notes

  • If banana chips are not available, dried bananas finely chopped or freeze-dried bananas can be used as substitutes.
  • Adjust almond flour quantity depending on the thickness and type of almond butter used; no-stir almond butter works best.
  • Use maple syrup instead of honey for a vegan version.
  • Choose a gluten-free bourbon to keep the recipe gluten-free.
  • These bites can be enjoyed straight from the fridge or freezer and thaw quickly at room temperature.
