4.5 from 138 reviews

A wholesome and naturally sweetened Date Overnight Oats recipe featuring Medjool dates and chia seeds for a creamy texture. This easy no-cook breakfast can be prepared ahead and customized with optional toppings like bananas, nuts, and honey for added flavor and crunch.

Ingredients

Scale

Overnight Oats:

  • 2 cups unsweetened almond milk
  • 1/4 tsp kosher salt
  • 2 tbsp honey (optional)
  • 4 Medjool dates, pitted and coarsely chopped
  • 2 tbsp chia seeds
  • 1 cup rolled oats (old-fashioned oats recommended)
  • 1 tsp ground cinnamon

Toppings (Optional):

  • Honey, for drizzling
  • Sliced bananas
  • Chopped nuts

Instructions

  1. Prepare Date Paste: Pit and coarsely chop the Medjool dates then blend them with 1/4 cup almond milk in a blender or food processor until smooth and creamy. This paste will naturally sweeten and thicken your oats. Alternatively, finely mince the dates and whisk into the milk until mostly broken down if no blender is available.
  2. Assemble Ingredients in Jars: In two mason jars, divide the rolled oats, chia seeds, ground cinnamon, and kosher salt evenly. Add the date paste into each jar. Pour in the remaining 1.75 cups almond milk and add honey if using, directly to the wet ingredients for best incorporation.
  3. Mix Thoroughly: Seal the jars tightly and shake vigorously for 30-45 seconds to fully combine ingredients, submerge oats, and evenly distribute the chia seeds.
  4. Refrigerate Overnight: Place the jars in the refrigerator for at least 4 hours, ideally 8 or more, to allow the oats and chia seeds to hydrate and develop a creamy texture.
  5. Serve: In the morning, stir the oats well to recombine any separation. Adjust consistency by adding a splash of milk if too thick. Top with optional sliced bananas, chopped nuts, or an extra drizzle of honey. Serve directly from the jar or transfer to a bowl.

Notes

  • Using unsweetened almond milk keeps the recipe dairy-free and lower in calories.
  • Medjool dates provide natural sweetness and creaminess, reducing the need for additional sweeteners.
  • Adjust the thickness by varying the soaking time or milk quantity according to your preference.
  • Chia seeds not only thicken the oats but add extra fiber and omega-3 fats.
  • Overnight oats can be stored refrigerated for up to 3 days.
