  2. Cook Jam: In a large pot, combine the chopped apples, granulated sugar, brown sugar, cinnamon, nutmeg, allspice, salt, lemon juice, and apple cider or juice. Stir well to mix all ingredients evenly. Bring the mixture to a boil over medium-high heat, then reduce the heat and let it simmer for 30 to 40 minutes. Stir the jam often to prevent sticking and to help it thicken to the desired consistency.
  3. Test Doneness: To check if the jam is ready, place a spoonful onto a chilled plate and let it sit for a minute. If the jam gels slightly and doesn’t run off the plate easily, it’s done and ready for jarring.
