Potstickers
- 12 oz frozen potstickers (pork, chicken, or veggie)
Vegetables
- 1 cup bell peppers, sliced (red and yellow)
- 2 cups broccoli florets
- 3 green onions, chopped
- 3 cloves garlic, minced
Sauce
- 3 tbsp low-sodium soy sauce
- 1 tbsp sesame oil
- 1 tbsp cornstarch mixed with 2 tbsp water
- Prepare the vegetables. Gather all the vegetables and chop them into bite-sized pieces, ensuring the bell peppers, broccoli, and green onions are ready to cook.
- Sauté aromatics. Heat sesame oil in a large skillet over medium heat. Add minced garlic and chopped green onions and sauté for 1-2 minutes until fragrant.
- Cook the potstickers. Place the frozen potstickers in a single layer in the skillet. Cook without moving for 3-4 minutes until the bottom side is golden brown, then flip each potsticker to cook on the other side.
- Add vegetables. Toss in the sliced bell peppers and broccoli florets with the potstickers. Stir-fry the mixture for 4-5 minutes until the vegetables are tender-crisp.
- Make and add the sauce. In a small bowl, combine the low-sodium soy sauce, sesame oil, and cornstarch-water mixture. Pour this sauce over the stir-fry and toss to evenly coat all ingredients.
- Thicken the sauce. Continue cooking for another minute, stirring constantly, until the sauce thickens slightly and coats the potstickers and vegetables well. Serve hot.
Notes
- For extra crispiness, you can pan-fry the potstickers separately first then add to the stir-fry.
- Adjust vegetables based on seasonality or preference; snap peas or carrots work well.
- If you prefer a spicier dish, add red pepper flakes or a splash of chili oil.
- This dish is great served with steamed rice or noodles for a full meal.
- Use low-sodium soy sauce to control the salt content.
