Ingredients

Scale

Cherry Filling

  • 2 pounds pitted cherries (fresh or defrosted if frozen)
  • ⅔ cup granulated sugar
  • 2 tablespoons fresh lemon juice (juice from approximately 1 large lemon)
  • 3 tablespoons cornstarch

Batter

  • 5 tablespoons unsalted butter (at room temperature)
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 cup whole milk (or milk of choice)
  • 1 teaspoon fresh baking powder

Instructions

  1. Preheat Oven: Preheat your oven to 350° Fahrenheit to prepare for baking the cobbler.
  2. Prepare Cherry Filling: In a medium saucepan, combine the pitted cherries, ⅔ cup sugar, lemon juice, and cornstarch. Place the saucepan on medium heat on the stovetop.
  3. Simmer Filling: Stir the mixture frequently and simmer for 5 to 10 minutes until the cherries burst and the filling thickens. Remove from heat and set aside.
  4. Melt Butter in Baking Dish: Place the 5 tablespoons of unsalted butter into your baking dish and put it into the preheated oven. Bake for 3 to 5 minutes until the butter is fully melted.
  5. Make Batter: While the butter melts, mix together the flour, 1 cup sugar, milk, and baking powder in a mixing bowl until smooth with no lumps.
  6. Pour Batter Over Butter: Carefully remove the baking dish from the oven and pour the batter over the melted butter, fully covering it. Do not stir the batter and butter together.
  7. Add Cherry Filling: Spoon the prepared cherry filling evenly over the batter layer. The filling may slightly sink into the batter—do not stir them together.
  8. Bake Cobbler: Return the baking dish to the oven and bake for 45 minutes or until the filling is bubbly and the crust is golden brown and fully cooked.
  9. Cool: Remove the cobbler from the oven and let it cool for about 10 minutes before serving.
  10. Serve: Serve warm, optionally topped with vanilla bean ice cream for an extra indulgent treat.

Notes

  • Use either fresh or defrosted frozen cherries for best results.
  • Do not stir the batter and filling after layering; this helps achieve a distinct crust and juicy filling.
  • Allow the cobbler to cool slightly before serving to let the filling set.
  • For a dairy-free version, substitute whole milk with almond or oat milk and use dairy-free butter alternatives.
  • Vanilla bean ice cream pairs beautifully as a topping but is optional.
