  • ½ cup reserved pasta water

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve ½ cup of pasta water before draining the pasta.
  2. Prepare the Chicken: Season the chicken breasts with salt and pepper. In a large skillet over medium-high heat, add 1 tablespoon of olive oil. Cook the chicken breasts for about 6-7 minutes per side until golden brown and cooked through. Remove from the skillet and let rest before slicing.
  3. Cook the Vegetables: Using the same skillet, add another tablespoon of olive oil. Add the broccoli, bell peppers, zucchini, and asparagus. Season with the Italian herb blend, salt, and pepper. Sauté the vegetables for 5-7 minutes until they are tender but still crisp. Add the cherry tomatoes and cook for an additional 2 minutes.
  4. Combine Pasta and Sauce: Add the cooked pasta to the skillet with the vegetables. Pour in the heavy cream and the reserved pasta water. Toss thoroughly to combine the ingredients. Stir in the grated Parmesan cheese until the sauce is creamy and evenly coats the pasta and vegetables.
  5. Serve: Slice the cooked chicken breasts and arrange them on top of the pasta primavera. Serve immediately, garnished with extra Parmesan cheese if desired.
