This classic Egg Fried Rice recipe is a quick and easy dish featuring day-old jasmine rice stir-fried with scrambled eggs, green onions, and savory soy sauce. Perfect as a side or a light main, it combines simple ingredients for a flavorful and satisfying meal.

  • 2 cups cooked jasmine rice (cold & day-old or any white long grain rice)
  • 1 green onion (finely chopped)
  • 2.5 tbsp regular soy sauce (or light soy sauce; avoid dark soy sauce)
  • 1/2 tbsp sesame oil
  • 4 large eggs (beaten)
  • 2 tbsp vegetable oil (or any neutral oil)

Instructions

  1. Heat the oil: Heat 2 tbsp of vegetable oil in a large pan or wok. If using a wok, allow the oil to start smoking slightly to add flavor; if using a normal pan, simply heat the oil until hot.
  2. Cook the eggs: Pour the beaten eggs into the hot oil. Stir-fry quickly so the eggs cook evenly and form soft curds without becoming dry or crispy.
  3. Add the rice: Once the eggs have just set but remain moist, add the cold cooked rice to the pan. Break apart any clumps with a spatula and mix it thoroughly with the eggs.
  4. Incorporate green onions: Push the rice and eggs mixture to one side of the pan. Add the remaining vegetable oil to the empty space along with the finely chopped green onions. Stir the onions briefly to release their flavor, then combine everything together.
  5. Season and finish: Drizzle the soy sauce and sesame oil along the edges of the pan and toss the ingredients continuously until the rice takes on a uniform brown color. Remove from heat and serve immediately while hot for best flavor.

  • Use cold, day-old rice for best texture; freshly cooked rice can result in soggy fried rice.
  • Adjust soy sauce quantity to taste and use light soy sauce for a less intense flavor.
