A hearty and comforting Fall Apple Cider Beef Stew served over creamy, cheesy mashed potatoes, combining the sweet tang of apple cider with tender sirloin and fresh autumn vegetables for a perfect seasonal dinner.

Ingredients

Scale

Beef Stew

  • 1 Tablespoon olive oil
  • 2 Tablespoons butter
  • 3/4 lb top sirloin cubes
  • Salt and pepper to taste
  • 2 cups apple cider
  • 1/2 cup beef broth
  • 1 large onion, chopped
  • 2 medium carrots, peeled and chopped
  • 1 Tablespoon all-purpose flour

Mashed Potatoes

  • 6 large potatoes
  • 1/4 cup milk
  • 1/4 cup sour cream
  • 1 cup sharp cheddar cheese, shredded
  • 3 Tablespoons chives

Instructions

  1. Preheat and Brown Beef: Preheat the oven to 375°F. In a pan over medium-high heat, melt butter with olive oil. Season the top sirloin cubes with salt and pepper, then add to the hot pan. Brown the beef on all sides for 6-8 minutes.
  2. Sauté Vegetables: Add the chopped onion and carrots to the pan with the beef and cook together for 4-5 minutes until softened.
  3. Add Flour: Sprinkle flour over the beef and vegetables and stir well to coat everything evenly, cooking for an additional 1-2 minutes to remove the raw flour taste.
  4. Add Liquids and Cook: Pour in the apple cider and beef broth, stirring to combine. Bring the mixture to a boil.
  5. Oven Cooking: Transfer the mixture to an oven-safe dish if not already in one, cover, and place in the oven. Cook for 1 to 1 ½ hours until the beef is tender and flavors meld.
  6. Cook Potatoes: While the stew cooks, peel and chop the potatoes, then boil them in salted water until tender, about 15-20 minutes.
  7. Mash Potatoes: Drain the potatoes and return them to the pot. Mash with milk, sour cream, shredded cheddar cheese, and chives until creamy and well combined.
  8. Serve: Serve the apple cider beef stew hot over the cheesy mashed potatoes for a delicious, warming meal.

Notes

  • Use apple cider without added sugars for the best flavor balance.
  • For a thicker stew, increase the flour by an additional tablespoon.
  • Leftovers can be refrigerated up to 3 days; reheat gently on the stove or in the oven.
  • Substitute sour cream with Greek yogurt for a lighter option.
  • Chives can be replaced with green onions or parsley if preferred.
