Ingredients

Scale

Base

  • 2 flatbreads or naan breads

Sauce & Toppings

  • 1 cup tomato sauce (preferably homemade or a good quality store-bought)
  • 12 ripe tomatoes, thinly sliced
  • 2 cups fresh mozzarella cheese (sliced or shredded)
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves

Seasoning & Oil

  • 2 tablespoons olive oil
  • 12 cloves garlic, minced
  • Salt to taste
  • Pepper to taste
  • Optional: Red pepper flakes (for a bit of heat)

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C). If you have a pizza stone, place it inside the oven now to allow it to get hot and help create a crispy base for your flatbread pizzas.
  2. Prepare Garlic Oil: In a small bowl, combine the olive oil and minced garlic. Use a brush to lightly coat each flatbread with this garlic-infused oil, which will add flavor and keep the bread moist.
  3. Add Tomato Sauce: Evenly spread a thin layer of tomato sauce over each flatbread, making sure to leave a small border around the edges free of sauce to create a nice crust.
  4. Layer with Cheese: Distribute the fresh mozzarella slices or shredded mozzarella evenly over the tomato sauce on each flatbread. Then sprinkle the grated Parmesan cheese on top for an extra layer of cheesy goodness.
  5. Add Tomatoes: Arrange the thinly sliced tomatoes in a single layer over the cheese. This adds freshness and a subtle sweetness.
  6. Season: Sprinkle salt and pepper over the top to taste. If you prefer a bit of heat, add a pinch of red pepper flakes now.
  7. Bake: Place the flatbreads directly on the oven rack or on the preheated pizza stone. Bake for 10-12 minutes, or until the cheese is melted, bubbling, and the edges of the flatbread are crispy and golden brown.
  8. Add Fresh Basil: Remove the pizzas from the oven and immediately scatter fresh basil leaves on top. The residual heat will gently wilt the basil, releasing its aromatic flavor.
  9. Serve: Optionally drizzle a little more olive oil on top for extra richness. Slice the flatbread pizzas and serve hot to enjoy their full flavor and texture.

Notes

  • Using a pizza stone helps achieve a crispier crust but isn’t necessary.
  • For a spicier flavor, increase the amount of red pepper flakes or add sliced chili.
  • Homemade tomato sauce delivers the best flavor, but store-bought works well for convenience.
  • Fresh mozzarella provides creamier meltiness compared to shredded low-moisture mozzarella.
  • To keep the basil vibrant, add it just after baking rather than before.
