Instructions

  1. Prepare the Pan: Line a baking sheet with wax paper and lightly grease it with cooking spray to prevent sticking.
  2. Melt and Mix: In a pot over low heat, melt the butter. Add the mini marshmallows and stir consistently until fully melted and smooth. Remove from heat immediately to prevent burning, then add the Fruity Pebbles cereal and stir quickly until every piece is coated in the marshmallow mixture.
  3. Shape the Base: Transfer the cereal mixture to the prepared pan. Press and pat it down firmly into a thin, even rectangle using a spatula or your hands (greased or wet to prevent sticking).
  4. Spread the Fluff: Evenly spread the marshmallow fluff on top of the cereal rectangle in a thin layer, which will act like the ‘nori’ wrapper for the sushi rolls.
  5. Roll the Sushi: Slice the rectangular sheet in half crosswise. Starting from the long side, tightly roll up both halves separately, forming two “sushi rolls.”
  6. Chill to Set: Place the rolled sushi sheets in the refrigerator and chill for about 1 hour until firm.
  7. Slice and Serve: Using a sharp knife, cut each roll into bite-sized sushi pieces. Serve immediately or store chilled.
