For the Potatoes:

  • 1 lb Yukon gold potatoes, cut into ½ inch cubes

  • ¼ teaspoon ground black pepper, plus more to taste
  • 1 tablespoon olive oil
  • 2 tablespoons ghee or butter

For the Steak:

  • 1 ¼ lb sirloin steak, cut into ½ inch cubes
  • 2 tablespoons ghee or butter
  • Salt and pepper to season
  • Freshly chopped parsley for garnish

Instructions

  1. Prep: Heat a large cast iron skillet over medium heat. Add the olive oil and two tablespoons of ghee to the pan to get it hot and ready for cooking.
  2. Cook the potatoes: Once the ghee is melted, add the cubed potatoes. Sprinkle the minced garlic, dried thyme, dried oregano, sea salt, and ground black pepper evenly over the potatoes. Let them cook for 2-3 minutes undisturbed before stirring, then continue cooking and stirring every 1-2 minutes until the potatoes are golden brown and fork tender, approximately 8-10 minutes. Avoid overcrowding for even cooking. Once done, remove the potatoes and any browned bits from the pan and set aside.
  3. Sear the steak: Increase the heat to medium-high and add the remaining two tablespoons of ghee to the pan. Once melted, add the steak cubes and season with a dash of salt and pepper. Allow them to cook for at least 2 minutes without stirring to develop a nice sear. Stir and continue cooking for another 1-2 minutes until golden brown on all sides.
  4. Combine: Return the cooked potatoes to the pan with the steak and gently stir to combine all the flavors. Adjust seasoning by adding more salt and pepper if needed. Garnish with freshly chopped parsley before serving. Enjoy immediately while hot.
