Ingredients

Scale

For the Dressing

  • 2 ripe peaches, halved and pitted
  • 2 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 1 tablespoon whole grain mustard
  • 2 tablespoons apple cider vinegar
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder

Instructions

  1. Grill the Peaches: Preheat your grill or grill pan over medium heat. Lightly brush the peach halves with a small amount of olive oil to prevent sticking. Place the peaches cut-side down on the grill and cook for about 3–4 minutes until grill marks appear and the fruit starts to caramelize. Flip and grill for another 2 minutes on the skin side. Remove from heat and let the peaches cool slightly.
  2. Blend the Ingredients: Transfer the cooled peaches to a blender or food processor. Add honey, Dijon mustard, whole grain mustard, apple cider vinegar, lemon juice, salt, black pepper, and garlic powder. Blend until the mixture is smooth and creamy.
  3. Adjust Consistency: While blending, slowly drizzle in the extra virgin olive oil. Continue blending until the dressing reaches a smooth consistency. If a thinner texture is preferred, gradually add water by the teaspoon until desired consistency is achieved.
  4. Taste and Serve: Taste the dressing and adjust the seasoning if needed by adding more honey for sweetness or more vinegar for tanginess. Serve immediately over salads, grilled meats, or as a dip.

Notes

  • Use ripe but firm peaches for best grilling results to avoid mushiness.
  • Make sure to let the peaches cool slightly before blending to prevent overheating the blender and altering texture.
  • Adjust the sweetness and acidity according to personal preference.
  • This dressing can be stored in an airtight container in the refrigerator for up to 3 days; stir well before serving.
  • For a smoky flavor, use a charcoal grill or add a small amount of smoked paprika to the dressing.
