Ingredients

Scale

Meat and Vegetables

  • 1 pound ground turkey
  • 2 medium zucchinis, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced

Seasonings and Cheese

  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • Optional: red pepper flakes, to taste

Instructions

  1. Heat olive oil: Heat the olive oil in a large skillet over medium heat to prepare for sautéing the vegetables and turkey.
  2. Sauté onion and garlic: Add the chopped onion and minced garlic to the skillet, cooking for 2-3 minutes until the onion becomes translucent, releasing sweet aromas.
  3. Cook ground turkey: Increase heat to medium-high and add ground turkey. Break up the meat with a wooden spoon and cook for 5-7 minutes until browned and fully cooked through.
  4. Season turkey: Season the cooked turkey with paprika, dried oregano, salt, and pepper. Stir thoroughly to coat all the meat evenly with the spices.
  5. Add zucchini: Mix in the sliced zucchini and cook for 5-7 minutes until the zucchini is tender yet retains a slight crispness.
  6. Add Parmesan cheese: Sprinkle the grated Parmesan cheese over the skillet mixture and stir until the cheese melts and integrates evenly throughout the dish.
  7. Garnish and serve: Remove skillet from heat. Garnish with chopped fresh parsley and add optional red pepper flakes if desired. Serve hot and enjoy your meal.

Notes

  • Use lean ground turkey to keep the dish healthy and low in fat.
  • You can substitute zucchini with yellow squash for a slightly different flavor.
  • Adjust seasoning to your taste, especially the salt and optional red pepper flakes for more heat.
  • To make it gluten-free, ensure your paprika and oregano are pure spices with no additives.
  • This dish pairs well with a side of steamed rice, quinoa, or a fresh green salad.
