Ingredients

Scale

Cookie Dough

  • 1 box Lemon Cake Mix (approximately 15.25 oz)
  • 8 oz Cream Cheese, softened
  • 1/2 cup Butter, softened
  • 1 large Egg
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Powdered Sugar (for rolling)

Glaze

  • 2 tablespoons Butter
  • 2 cups Powdered Sugar
  • 23 tablespoons Milk (use 2 tbsp for piping glaze, 3 tbsp for dipping cookies)
  • 1/2 teaspoon Vanilla Extract

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it reaches the proper temperature by the time your dough is ready.
  2. Prepare Dough: Soften the cream cheese and butter, then in a mixing bowl, combine the lemon cake mix, softened cream cheese, butter, egg, and vanilla extract. Mix thoroughly until fully combined into a thick, sticky dough.
  3. Form Cookies: Using a medium cookie scoop or about 1.5 tablespoons of dough, roll into balls. Roll each dough ball in powdered sugar to coat completely, then place on a lightly greased baking sheet, spacing them evenly.
  4. Bake Cookies: Bake the cookies for 9 to 10 minutes, or until they are just puffed and cracked on the surface but still soft in the center. Remove from the oven and let the cookies cool completely before glazing or serving.
  5. Make Glaze: In a small saucepan, melt 2 tablespoons of butter over low heat and then remove from heat. Whisk in the powdered sugar, vanilla extract, and 2 tablespoons of milk if piping the glaze, or 3 tablespoons if you prefer to dip the cookies into the glaze for full coverage.
  6. Glaze Cookies: Once the cookies have cooled, either drizzle the glaze over the tops or dip the cookies completely into the glaze, then place on a wire rack to set.

Notes

  • Make sure the cream cheese and butter are fully softened to ensure a smooth dough.
  • Do not overbake cookies; they should remain soft with a slight crackle on top.
  • Adjust milk quantity in glaze depending on whether you want a thicker glaze for piping or a thinner glaze for dipping.
  • Store cookies in an airtight container; they stay fresh for up to 5 days.
  • For an extra lemony kick, add 1 tablespoon of lemon zest to the dough.
