Bread Dough

  • 1/4 cup honey (60 ml)
  • 1/4 cup melted butter (60 ml)
  • 3 cups all-purpose flour (375 g)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Instructions

  1. Soften the oats: In a small bowl, combine 1 cup of rolled oats with 1 cup (240 ml) of warm milk and let the mixture sit for 10 minutes to soften the oats and infuse the milk with their flavor.
  2. Activate the yeast: In a separate bowl, dissolve 2 teaspoons of active dry yeast in 1/4 cup (60 ml) of warm water. Add 1 tablespoon of honey to feed the yeast, and let it sit for 5-10 minutes until the mixture becomes bubbly, indicating the yeast is active.
  3. Combine wet ingredients: Add the softened oats mixture, 1/4 cup (60 ml) melted butter, and 1/4 cup (60 ml) honey to the yeast mixture. Stir everything together until well combined.
  4. Add dry ingredients: Gradually mix in 3 cups (375 g) of all-purpose flour along with 1 teaspoon of ground cinnamon and 1/2 teaspoon salt. Stir until the dough forms a shaggy texture.
  5. Knead the dough: Transfer the dough to a lightly floured surface and knead it for about 8-10 minutes until it becomes smooth and elastic. If the dough is sticky, add flour a tablespoon at a time until manageable.
  6. First rise: Place the kneaded dough in an oiled bowl and cover it with a damp cloth. Let it rise in a warm spot for 1 to 1.5 hours until it doubles in size.
  7. Shape the dough: Punch down the risen dough to release air bubbles, then shape it into a log. Place the shaped dough into a greased loaf pan for the second rise.
  8. Second rise: Let the dough rise again in the loaf pan for 30-40 minutes until it has noticeably puffed up.
  9. Bake the bread: Preheat the oven to 375°F (190°C). Bake the bread for 30-35 minutes until the crust is golden brown and the loaf sounds hollow when tapped on the bottom.
