Pastry and Finishing

  • 1 package puff pastry (thawed)
  • 1 egg (beaten, for egg wash)

Instructions

  1. Sear the Beef: Heat olive oil in a skillet over medium-high heat. Season the beef cubes with salt and pepper, then sear them in the skillet for 2-3 minutes on each side until browned but not fully cooked. Remove the beef from heat and let it cool completely.
  2. Prepare the Mushroom Duxelles: Using the same skillet, add the finely chopped mushrooms, shallots, and minced garlic. Cook over medium heat, stirring occasionally, until the mushrooms have released their moisture and browned, about 5-7 minutes. Stir in fresh or dried thyme and season with salt and pepper to taste. Remove from heat and cool.
  3. Roll Out the Puff Pastry: On a floured surface, roll out the thawed puff pastry sheets to about 1/8 inch thickness. Cut into 3×3 inch squares to form individual pockets for the bites.
  4. Assemble the Bites: On each puff pastry square, place a small spoonful of the cooled mushroom duxelles, then top with a piece of seared beef. Fold the pastry over the filling, creating a sealed pocket. Press the edges with a fork to seal completely.
  5. Egg Wash and Bake: Preheat the oven to 400°F (200°C). Arrange the prepared beef wellington bites on a baking sheet lined with parchment paper. Brush each bite generously with the beaten egg to achieve a golden finish. Bake for 15-20 minutes or until the pastry is golden brown and fully cooked.
