Main Ingredients
- 150g golden Oreo cookies (or plain/gluten-free biscuits)
- 60g vegan or dairy-free cream cheese
- 200g dairy-free white chocolate

- Prepare tray: Line a baking tray with greaseproof paper and set aside to place your truffles once shaped.
- Crush cookies: Place the cookies in a food processor or blender and pulse until they reach a crumb-like consistency. If you don’t have an electric mixer, crush them manually with a rolling pin.
- Mix dough: Transfer the cookie crumbs to a large bowl, add the vegan cream cheese, and mix thoroughly until the mixture is sticky and can hold its shape when rolled into balls.
- Shape snowmen: Using clean hands, weigh 20g of mixture and roll into a ball for the body, then roll 7g into a smaller ball for the head. Place the smaller ball on top of the larger to form a snowman. The two pieces will stick together once chilled. Place each snowman onto the lined tray and repeat with the remaining mixture.
- Freeze to set: Place the tray into the freezer for about 20 minutes until the snowmen are firm to touch.
- Melt chocolate: About 5 minutes before removing the truffles, melt the dairy-free white chocolate in a heatproof bowl over a bain-marie (a bowl over simmering water), or gently in the microwave until fully smooth.
- Coat truffles: Take the snowmen out of the freezer and coat each in melted white chocolate. Use a toothpick dipped in the bottom of each truffle to dunk into the chocolate or hold on a fork and drizzle chocolate over. Allow excess chocolate to drip off. For a smooth coat on the light cookie base, one layer is sufficient, but you can repeat to thicken the coating if desired.
- Set chocolate coating: Place the coated truffles back onto the lined tray and return to the freezer for 5-10 minutes so the chocolate can harden quickly.
- Prepare decorations: Take some leftover white chocolate and mix in black food gel, putting it into a piping bag with a small cut tip. Repeat with another portion mixed with orange food gel.
- Decorate snowmen: Pipe orange carrot noses onto the truffles, then add black eyes, mouths, and buttons to bring the snowmen to life.
- Add scarves: Cut strawberry lace sweets to fit around each snowman’s neck as scarves. Optionally, use melted white chocolate to stick the scarves in place.
- Final freeze: Place the finished snowman truffles back in the freezer for 5 minutes to solidify the decorations.
