This Onion Cottage Cheese Tart is a delightful savory pastry featuring a creamy cottage cheese and parmesan filling topped with tender pearl onions. Baked in a buttery tart crust, it offers a perfect balance of rich flavors and a satisfying texture, great as a light meal or elegant appetizer.

Ingredients

Scale

Filling

  • 250 g cottage cheese
  • 50 g grated parmigiano
  • 1 egg
  • 1/3 tsp salt
  • Black pepper, to taste

Topping

  • 40 g pearl onions (34 onions)
  • 2 tbsp olive oil

Crust

  • 1 pie crust, store-bought or homemade

Instructions

  1. Prepare the tart crust: Press a pie crust into a tart pan evenly. Prick the bottom and sides of the crust with a fork to prevent bubbling. Pre-bake the crust in a preheated oven at 200°C (392°F) for 10 minutes to set and partially cook it.
  2. Prepare the filling: In a mixing bowl, crack and lightly whisk the egg. Add the cottage cheese, grated parmigiano, and salt. Stir well to combine into a smooth and consistent mixture.
  3. Slice and prepare the onions: Peel the pearl onions and thinly slice them lengthwise. Lightly brush the top side of the sliced onions with olive oil to enhance flavor and aid caramelization during baking.
  4. Assemble the tart: Remove the pre-baked crust from the oven. Spread the cheese and egg mixture evenly over the base of the tart crust to form the filling layer.
  5. Add the onions: Arrange the thinly sliced onions over the cheese filling, placing the oiled side facing up for uniform browning. Dust with freshly cracked black pepper according to your taste.
  6. Bake the tart: Place the tart back into the oven and bake for 30 to 35 minutes at 200°C (392°F) until the filling is set, and the top is golden brown, indicating doneness.

Notes

  • Use fresh pearl onions for the best sweetness and texture; if unavailable, small shallots may be a substitute.
  • The tart can be served warm or at room temperature, making it versatile for different occasions.
  • For a gluten-free option, use a gluten-free pie crust.
  • Adjust seasoning with salt and pepper based on your preference.
  • Cool the tart slightly before slicing to help the filling set and prevent it from falling apart.
