This Southern Chicken Scampi with Creamy Parmesan Grits is a delightful fusion of zesty, garlicky chicken and rich, cheesy grits. The tender chicken is sautéed with garlic, shallots, and a hint of crushed red pepper flakes, then finished with lemon and fresh parsley for brightness. Served atop velvety, creamy Parmesan-infused grits, this comforting dish is perfect for a hearty dinner or special occasion with a Southern twist.

Ingredients

Scale

Chicken and Sauce

  • 1 ½ lbs boneless, skinless chicken breast, thinly sliced
  • 4 cloves garlic, minced
  • 1 shallot, minced
  • 1/4 teaspoon crushed red pepper flakes
  • 3 tablespoons olive oil
  • 1 tablespoon butter
  • 1/4 cup dry white wine (or chicken broth)
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper, to taste

Creamy Parmesan Grits

  • 1 cup stone-ground grits
  • 4 cups water or chicken broth
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tablespoons butter
  • Salt and black pepper, to taste

Instructions

  1. Prepare the Grits: Bring water (or chicken broth) and whole milk to a boil in a medium saucepan. Slowly whisk in the stone-ground grits to prevent lumps.
  2. Simmer the Grits: Reduce the heat to low, cover the saucepan, and let the grits simmer gently for 25–30 minutes, stirring occasionally to prevent sticking and promote creamy consistency.
  3. Finish the Grits: Once the grits have thickened, stir in the heavy cream, grated Parmesan cheese, butter, and season with salt and black pepper. Cover and keep warm on low heat.
  4. Sauté Aromatics: In a large skillet, heat the olive oil and butter over medium heat. Add the minced garlic, shallot, and crushed red pepper flakes. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.
  5. Cook the Chicken: Add the thinly sliced chicken breast to the skillet, season with salt and pepper, and cook for 6–8 minutes, turning occasionally, until the chicken is golden brown and cooked through.
  6. Make the Pan Sauce: Pour in the white wine (or chicken broth), lemon juice, and lemon zest. Let the mixture simmer for 2–3 minutes to reduce slightly and meld the flavors. Stir in the chopped fresh parsley and remove from heat.
  7. Serve: Spoon the creamy Parmesan grits into serving bowls. Top each with the sautéed chicken and spoon over the pan sauce. Garnish with additional parsley and lemon wedges if desired.

Notes

  • Use stone-ground grits for the best creamy texture.
  • If you prefer, substitute chicken broth for water to add extra flavor to the grits.
  • Adjust crushed red pepper flakes to control the level of heat to your taste.
  • Make sure to stir grits regularly during cooking to prevent lumps.
  • This dish pairs well with a crisp green salad or steamed vegetables.
