Ingredients

Scale

Main Ingredients

  • 1 pound lean ground beef
  • 2 tablespoons butter
  • 1 small yellow onion, diced
  • 1 small green bell pepper, diced
  • 8 ounces brown mushrooms, minced
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon Kosher salt
  • 1/2 teaspoon fresh ground black pepper
  • 1 tablespoon cornstarch
  • 1 cup beef broth
  • 8 ounces Provolone cheese slices, chopped (use 6 ounces if you prefer less cheese)
  • 6 brioche hamburger buns

Instructions

  1. Brown the Beef: Add the ground beef to a large cast iron skillet over medium-high heat. Allow it to brown undisturbed until a deep brown crust forms on about half the beef before breaking it apart. Stir and continue browning until a deep crust appears on about 50% of the meat.
  2. Sauté Vegetables: Remove the beef from the skillet but leave the fat in. Add the butter, diced onion, green bell pepper, and minced mushrooms. Let them brown without stirring for 1-2 minutes, then stir, and allow to brown for another 1-2 minutes before stirring again to develop good flavor and soften the vegetables.
  3. Combine Beef and Vegetables: Return the browned beef to the pan with the sautéed vegetables, mixing them together evenly.
  4. Prepare Sauce Mix: In a small cup, whisk together the beef broth and cornstarch until smooth.
  5. Add Seasonings and Sauce: Add the ketchup, Worcestershire sauce, Kosher salt, freshly ground black pepper, and the beef broth-cornstarch mixture into the skillet. Stir well to combine all ingredients.
  6. Simmer Mixture: Cook over medium heat until the mixture thickens and most of the sauce is reduced, leaving about 25% of the mixture as liquid. This should take approximately 3-5 minutes to achieve a sticky, sloppy joe consistency.
  7. Add Cheese: Turn off the heat. Add half of the chopped Provolone cheese to the mixture, stirring until melted. Gradually add more cheese until the desired cheesiness is reached.
  8. Toast Buns and Serve: Lightly toast the brioche hamburger buns. Spoon the cheesy sloppy joe mixture generously onto the buns and serve immediately.

Notes

  • Using a cast iron skillet helps develop a deeper crust on the beef for better flavor.
  • Adjust the amount of cheese to your preference, starting with less if you want a milder cheesiness.
  • To toast the buns, you can use a skillet, oven, or toaster depending on your kitchen setup.
  • For a lower-fat option, use lean ground beef and consider reducing or omitting butter.
  • Leftovers can be refrigerated for up to 3 days and reheated on the stovetop or microwave.
