A flavorful and elegant Roasted Shrimp Cocktail served with a zesty Lemon-Horseradish Aioli. This easy-to-make appetizer combines perfectly roasted shrimp with a creamy, tangy sauce enhanced by fresh lemon and horseradish, making it ideal for entertaining or a special occasion.

Ingredients

Scale

Aioli

  • 1/2 cup mayonnaise
  • 2 Tbsp. prepared horseradish
  • 1/4 tsp. finely grated lemon zest
  • 2 tsp. fresh lemon juice

Shrimp

  • 1 1/2 lb. medium shrimp, peeled and deveined
  • 2 tsp. extra-virgin olive oil
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tsp. chopped fresh parsley

Instructions

  1. Prepare the aioli: In a small bowl, combine the mayonnaise, prepared horseradish, and fresh lemon juice. Mix well and refrigerate for about 30 minutes to let the flavors meld and the sauce chill.
  2. Preheat and season shrimp: Preheat your oven to 400°F (204°C). Pat the shrimp dry thoroughly using paper towels to ensure they roast properly. Transfer them to a medium bowl, drizzle with extra-virgin olive oil, then season with kosher salt and freshly ground black pepper. Toss gently to coat all shrimp evenly.
  3. Roast the shrimp: Line a baking sheet with aluminum foil. Arrange the shrimp in a single layer on the sheet, spacing them about half an inch apart to allow even roasting. Place the sheet in the oven and roast the shrimp for 5 to 6 minutes, turning them halfway through, until they turn pink and are cooked through.
  4. Serve: Transfer the roasted shrimp to a serving platter. Sprinkle the lemon zest and chopped fresh parsley over the prepared aioli, add a bit of freshly ground black pepper, and serve the aioli alongside the shrimp. The shrimp cocktail can be enjoyed at room temperature or chilled, depending on your preference.

Notes

  • Ensure shrimp are patted very dry before roasting for a better sear and texture.
  • If you prefer more heat, add extra horseradish to the aioli.
  • Cook shrimp until just pink to avoid toughness.
  • Can be prepared ahead and served chilled or at room temperature.
  • Use fresh parsley and lemon zest for enhanced flavor.
