  • 1 sheet puff pastry, thawed (1/2 of a 17-oz package) or single pie crust

Instructions

  1. Sauté Aromatics: Heat ghee or butter in a large stockpot over medium heat. Add the finely chopped onion and cook until golden and caramelized, about 20 minutes. Then add the jalapeño and minced garlic, cooking for an additional 1 minute to release their flavors.
  2. Cook Ground Chicken: Stir in the ground chicken along with the garam masala, turmeric, and 1 1/2 teaspoons of salt. Cook the mixture until the chicken is no longer pink, ensuring spices are well combined.
  3. Simmer Potatoes and Peas: Add the diced potatoes and water to the pot. Cover and cook, stirring occasionally, until the potatoes are tender, about 25 minutes. Then stir in the peas and fresh cilantro, adjusting salt seasoning to taste.
  4. Assemble Pie: Transfer the filling mixture to a 2-quart (2 L) baking dish. Roll out the puff pastry sheet and place it over the filling, gently pressing the edges to seal. Cut a few small vents in the top of the pastry to allow steam to escape while baking.
  5. Bake the Pie: Preheat the oven to 400°F (200°C). Bake the pie for about 25 minutes or until the crust is golden brown and crispy. Remove from the oven and let it rest briefly before serving.
