  • 1 ½ lbs sirloin or ribeye steak, cubed
  • 2 tbsp butter
  • Salt, to taste
  • Black pepper, to taste
  • Smoked paprika, to taste

Vegetables

  • 4 large Russet or Yukon Gold potatoes, thinly sliced
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced

Liquids and Cheese

  • 1 cup heavy cream
  • 1 cup beef broth
  • 2 cups sharp cheddar cheese, freshly grated

Instructions

  1. Sear the Steak: In a skillet over medium-high heat, melt the butter. Season the cubed steak generously with salt, black pepper, and smoked paprika. Add to the skillet and sear the steak until browned on all sides, about 3-4 minutes. Remove from heat and set aside.
  2. Layer the Ingredients: In your slow cooker, start by layering half of the thinly sliced potatoes. Next, add half of the diced onions and minced garlic evenly over the potatoes. Then, spread the seared steak cubes in an even layer. Finish the layering with the remaining potatoes, onions, and garlic.
  3. Add Liquids: Pour the beef broth and heavy cream evenly over the layered ingredients in the slow cooker. Season with additional salt and pepper if desired.
  4. Add Cheese Topping: Sprinkle the freshly grated sharp cheddar cheese evenly over the top of the assembled casserole.
  5. Cook Low & Slow: Cover the slow cooker and cook on low for 6-8 hours, or on high for 3-4 hours, until the potatoes are tender and the cheese is melted and bubbly.

Notes

  • You can substitute ribeye or sirloin with any tender steak of your preference.
  • For a smoky depth, use smoked paprika but feel free to adjust to your taste.
  • Make sure to slice potatoes thinly to ensure even cooking in the slow cooker.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
  • For added flavor, garnish with fresh herbs like parsley or chives before serving.
