  • 4 tablespoons low sodium tamari or soy sauce

  • 1 tablespoon rice vinegar

  • 12 tablespoons sriracha
  • 12 tablespoons maple syrup or honey
  • 1/2 teaspoon red pepper flakes (optional, can omit for less spice)
  • Optional: 2 teaspoons chili garlic sauce

Instructions

  1. Boil Water: Bring a large pot of water to a rolling boil in preparation for cooking the noodles.
  2. Cook Noodles: Add the brown rice noodles to the boiling water and cook according to the package instructions, typically 5-7 minutes until tender but firm. Drain and set aside.
  3. Sauté Garlic: Finely mince the garlic cloves. Heat 1 tablespoon of oil in a sauté pan over low heat and add the garlic.
  4. Sauté Until Golden: Cook the garlic gently for about 2 minutes until golden brown and fragrant.
  5. Add Ginger: Add the freshly grated ginger to the pan and sauté for an additional 1 minute, stirring frequently to combine flavors.
  6. Prepare Sauce: Remove the pan from heat and add the creamy peanut butter, tamari or soy sauce, rice vinegar, toasted sesame oil, sriracha, maple syrup or honey, red pepper flakes, and optional chili garlic sauce.
  7. Mix Sauce: Begin whisking the ingredients together adding 1/3 cup of hot water gradually to help blend the sauce into a smooth, pourable consistency. Add more hot water up to 1 cup as needed to reach desired thickness.
  8. Taste and Adjust: Taste the sauce and adjust the soy sauce for saltiness, sriracha for heat, or sweetness by adding more maple syrup or honey according to preference.
  9. Combine with Noodles: Add about half of the prepared peanut sauce to the cooked noodles and toss well to coat thoroughly, making sure the noodles are evenly covered.
  10. Adjust Sauce Amount: Depending on taste and consistency preference, gradually add more sauce until you reach your desired level of sauciness.
  11. Serve: Plate the noodles and garnish with crushed peanuts, chopped scallions, and additional red pepper flakes if desired. Serve alongside vegetables or a protein of your choice for a complete meal.
