Ingredients

Scale

Rice Layer

  • 2 cups cooked sushi rice
  • 1 tablespoon rice vinegar
  • ½ teaspoon sugar
  • ½ teaspoon salt

Salmon Topping

  • 12 oz skinless salmon fillet, cooked and flaked
  • ¼ cup mayonnaise
  • 2 tablespoons Sriracha sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil

Additional Ingredients

  • ½ cup shredded mozzarella cheese
  • 2 sheets roasted seaweed (nori), cut into small squares
  • 2 green onions, thinly sliced
  • 1 tablespoon toasted sesame seeds

Instructions

  1. Preheat Oven: Preheat the oven to 400°F (200°C) and lightly grease an 8×8-inch baking dish to prevent sticking.
  2. Prepare Rice Layer: In a bowl, combine cooked sushi rice with rice vinegar, sugar, and salt. Mix thoroughly to season the rice, then evenly press it into the bottom of the greased baking dish to form a compact base.
  3. Make Salmon Mixture: In a separate bowl, combine the flaked cooked salmon with mayonnaise, Sriracha sauce, soy sauce, and sesame oil. Mix well to create a creamy and spicy salmon topping.
  4. Assemble Layers: Spread the spicy salmon mixture evenly over the rice layer in the baking dish. Then sprinkle the shredded mozzarella cheese generously over the top.
  5. Bake: Place the baking dish in the preheated oven and bake for 18-20 minutes until the cheese is melted, bubbly, and slightly golden.
  6. Garnish and Serve: Remove from the oven and allow to cool slightly. Garnish with thinly sliced green onions and toasted sesame seeds. Serve warm with roasted seaweed squares for scooping and enjoying the sushi bake.

Notes

  • Use day-old sushi rice for best texture in the bake.
  • You can substitute mozzarella with a blend of mozzarella and cheddar for a more complex flavor.
  • Adjust the amount of Sriracha sauce to taste for desired spice level.
  • Ensure salmon is fully cooked before baking for food safety.
  • Serve immediately after baking for optimal texture and flavor.
