Ingredients

Scale

Filling

  • 1 cup fresh spinach, chopped and lightly sautéed (or thawed frozen spinach squeezed dry)
  • ½ cup feta cheese, crumbled
  • ¼ cup cream cheese, softened
  • 1 garlic clove, minced
  • ½ tsp dried oregano (or Italian seasoning)
  • ¼ tsp black pepper
  • Pinch of salt (optional, since feta is salty)

Pastry

  • 1 sheet puff pastry (thawed if frozen)
  • 1 egg, beaten (for egg wash)
  • Coarse sea salt (for sprinkling, optional)

Instructions

  1. Prepare the filling: In a mixing bowl, combine the chopped sautéed spinach, crumbled feta cheese, softened cream cheese, minced garlic, dried oregano, black pepper, and a small pinch of salt if needed. Stir until the mixture is creamy and evenly combined.
  2. Preheat and prepare pastry: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Roll out the puff pastry sheet slightly to smooth it out.
  3. Assemble twists: Spread the spinach and feta mixture evenly over half of the puff pastry sheet. Fold the pastry over to cover the filling completely. Using a sharp knife, cut the folded pastry into strips about 1 inch wide.
  4. Twist and arrange: Gently twist each strip several times to create the twist shape. Place the twists carefully onto the prepared baking sheet, leaving space between them.
  5. Apply egg wash and salt: Brush the twists with the beaten egg wash to give them a golden color when baked. Optionally, sprinkle with coarse sea salt for added texture and flavor.
  6. Bake: Bake in the preheated oven for 18 to 22 minutes or until the puff pastry is fully puffed and golden brown. Remove from the oven and allow to cool slightly before serving.

Notes

  • Ensure the spinach is well drained to avoid soggy pastry.
  • You can substitute fresh spinach with frozen spinach, just make sure to thaw and squeeze out excess water.
  • Adjust salt carefully as feta cheese is naturally salty.
  • Serve warm for best flavor and texture.
  • These twists can be prepared ahead and baked just before serving.
