  • 2 cups fresh or frozen cranberries (approximately 1/2 pound)

  • 1 teaspoon ginger
  • 1/4 teaspoon allspice
  • 1/4 teaspoon cloves

Thickener

  • 2 sachets liquid fruit pectin (using 2 pouches of Certo brand at 170ml each)

Instructions

  1. Puree the Berries: Begin by pureeing the strawberries and cranberries in your food processor, fresh or frozen. Depending on your appliance’s capacity, puree them in batches. Transfer the combined berry puree into a large saucepan.
  2. Add Sugar and Spices: Measure out the sugar and spices, then add them to the saucepan with the pureed berries. Stir thoroughly to evenly combine all ingredients.
  3. Boil the Jam: Place the saucepan over medium-high heat and bring the mixture to a full, rolling boil—where bubbles continuously form even when stirring. Once boiling, maintain this for one full minute while stirring constantly.
  4. Add Pectin and Boil Again: Remove the pan from heat and stir in the liquid fruit pectin thoroughly. Return to medium-high heat and bring back to a full rolling boil. Boil for another full minute, stirring constantly, then remove from heat.
  5. Skim Foam and Fill Jars: After the boiling subsides, skim off any foam on the surface with a spoon or ladle and discard. Ladle the hot jam into preheated sterilized jars, leaving about 1/4 inch headspace. Seal jars with warm sterilized lids and screw on bands finger-tight without over-tightening.
  6. Process and Store the Jam: Submerge the jars in a boiling water bath, ensuring water covers jars by two inches. Boil for 10 minutes covered, then carefully remove jars and place on a heat-proof surface. Let jars cool and set undisturbed for 12 hours. Wipe jars clean, label, and store in a cool, dark pantry.

  • Ensure jars and lids are properly sterilized to safely preserve the jam.
  • The jam will thicken as it cools; do not overcook to avoid a very stiff texture.
