Instructions

  1. Prepare the slow cooker and roast: Place the chuck roast directly in the bottom of the slow cooker. There is no need to sear the roast beforehand, although you can if you prefer a richer flavor and crust.
  2. Add vegetables: Evenly distribute the chopped onion, bell pepper, celery, garlic, and potato chunks over the top of the roast to create a flavorful base.
  3. Add sauces and seasonings: Pour the BBQ sauce, tomato sauce, and water over the meat and vegetables. Crumble the beef bouillon cubes over the mixture, then sprinkle with salt, black pepper, and dried thyme to season the pot roast.
  4. Cook low and slow: Cover the slow cooker with its lid and cook on low heat for 8 to 10 hours. This slow cooking process will tenderize the meat and blend the flavors beautifully.
