Ingredients

Scale

Dairy

  • 1 block (32 Oz.) Velveeta Cheese, cut into cubes
  • 1 package (8 Oz.) Cream Cheese, cut into cubes

Canned Goods

  • 1 can (10 Oz.) Rotel (diced tomatoes and green chilies)
  • 1 can (10.75 Oz.) Cream of Mushroom Soup

Meat

  • 1 pound Ground Beef OR Sausage (or a combination of both)

Instructions

  1. Brown the Meat: In a pan over medium heat, cook the ground beef, sausage, or both until thoroughly browned. Drain any excess fat and set the meat aside.
  2. Prepare the Cheeses: Cut the Velveeta and cream cheese into cubes to help them melt evenly when cooking.
  3. Combine Base Ingredients: Place the cubed Velveeta and cream cheese into a crock pot. Pour in the Rotel and cream of mushroom soup. Stir well to combine all ingredients.
  4. Cook on Low: Set the crock pot to low heat and let the cheese mixture melt and meld together for about 30 minutes.
  5. Add the Meat: After 30 minutes, add the browned meat to the crock pot and continue cooking on low. Stir occasionally to ensure even mixing and prevent sticking. Cook for an additional 30 minutes until everything is hot and well incorporated.

Notes

  • You can substitute cream of mushroom soup with cream of chicken or cream of celery soup for a different flavor.
  • For a spicier queso, add jalapeños or hot sauce to taste.
  • If you want a smoother queso, stir more frequently while cooking in the crock pot.
  • This queso can be kept warm in the crock pot for several hours, making it ideal for parties.
  • Serve with tortilla chips, fresh vegetables, or as a topping for nachos or tacos.
