Instructions

  1. Toast the Bread: Place both slices of sourdough bread on a small baking sheet and broil on high in the oven for 1-2 minutes, watching carefully to ensure they become lightly browned but do not burn.
  2. Melt the Cheese: Remove the baking sheet from the oven, flip the bread slices over, and place sliced sharp cheddar cheese on one slice. Return to the broiler for another 1-2 minutes, until the cheese has melted.
  3. Assemble the Sandwich: Remove from the oven and top the melted cheese with pickled jalapeño slices. On the plain slice of bread, spread the grainy Dijon mustard evenly and drizzle with honey.
