A vibrant and flavorful dish featuring tender tilapia fillets topped with a smoky roasted red pepper sauce, perfect for a healthy and quick dinner.

Ingredients

Scale

For the Tilapia

  • 4 tilapia fillets (about 6 oz each)
  • 2 tbsp olive oil
  • Salt and pepper to taste

For the Roasted Pepper Sauce

  • 2 large red bell peppers
  • 3 garlic cloves
  • 2 tbsp lemon juice (freshly squeezed)
  • Salt and pepper to taste

Instructions

  1. Roast the Peppers: Preheat the oven to 400°F (200°C). Slice the red bell peppers, toss them with olive oil, salt, and pepper, then spread them evenly on a baking sheet. Roast for about 20 minutes until the peppers are softened and slightly charred, bringing out a deep smoky flavor.
  2. Prepare the Sauce: Once roasted, transfer the peppers to a blender along with the garlic cloves and freshly squeezed lemon juice. Blend until you achieve a smooth and creamy sauce. Adjust salt and pepper to taste.
  3. Cook the Tilapia: Heat a skillet over medium heat and add a little olive oil to coat the surface. Season the tilapia fillets with salt and pepper, then cook them for 3-4 minutes on each side until they become golden brown and flake easily with a fork.
  4. Combine and Serve: Pour the roasted pepper sauce over the cooked tilapia in the skillet. Allow it to simmer together for about one minute to meld the flavors, then serve immediately for a delicious and healthy meal.

Notes

  • For extra smoky flavor, you can char the bell peppers directly over an open flame before roasting.
  • If red bell peppers are not available, yellow or orange peppers can be used as a substitute.
  • This dish pairs well with steamed rice, quinoa, or a fresh green salad.
  • Leftover sauce can be refrigerated for up to 3 days and used as a dip or spread.
  • Ensure not to overcook the tilapia to maintain its moist, flaky texture.
