Sushi Rice

Filling

  • 1 6-ounce block baked tofu (cut into thin matchsticks)
  • ½ ripe avocado (peeled and cut into thin segments)
  • ½ red or orange bell pepper (cut into thin matchsticks)
  • 1 carrot (cut into long strips)
  • 1 Persian or ¼ English cucumber (halved and cut into thin strips)
  • 4 sheets toasted nori (halved)

Optional Wasabi

  • 2 tablespoons wasabi powder mixed with 1 tablespoon of water (optional)

Ginger-Tamari Sauce

  • ½ cup vegan mayonnaise
  • 2 teaspoons tamari
  • 2 teaspoons fresh ginger (grated)
  • 2 teaspoons rice vinegar
  • 1 teaspoon brown rice syrup
  • ¼ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. Prepare the Rice: Cook the sushi rice according to the package instructions. Once done, transfer the rice to a large bowl. Using a wooden paddle or spatula, gently mix in rice vinegar, evaporated cane sugar, and sea salt until the rice becomes slightly sticky. Set aside to cool to room temperature.
  2. Prepare the Filling: Arrange the thin matchsticks of baked tofu, avocado segments, bell pepper, carrot strips, and cucumber strips on a plate, making sure they are within easy reach for assembling the hand rolls.
  3. Form the Hand Rolls: Take one half-sheet of toasted nori, shiny side down, and hold it in one hand. With a dampened other hand, spread approximately ¼ cup of the cooled sushi rice evenly over half of the nori in a square shape. Place a small amount of your desired fillings diagonally across the rice, pointing toward your thumb. Carefully roll the nori into a cone shape, sealing the edge with a few grains of sushi rice or a dab of prepared wasabi if you prefer a spicy touch.
  4. Prepare the Ginger-Tamari Sauce: In a small bowl, whisk together vegan mayonnaise, tamari, freshly grated ginger, rice vinegar, brown rice syrup, sea salt, and freshly ground black pepper until the mixture is smooth and uniform.
  5. Serve: Drizzle the ginger-tamari sauce over the finished hand rolls. Serve immediately accompanied by pickled ginger and optional wasabi for added flavor.
