Mixed Nuts
- 16 oz (about 3 cups) mixed nuts (3 oz cashews, 3 oz almonds, 3 oz pecans, 3 oz walnuts, 4 oz peanuts – omit peanuts for Paleo)
Coating and Seasoning
- 1 large egg white
- 170g (about 1/2 cup) honey
- 1 1/2 tsp Kosher salt
- 1 tsp ground cumin
- 1 tsp ground cinnamon
- 1/2 tsp chili powder
- 1/2 tsp red pepper flakes
- 1/2 tsp cayenne pepper (use 1/4 tsp for milder mix)
- 1/4 tsp cracked black pepper
- 1/4 tsp ground ginger
- 1/4 tsp ground cloves
- Preheat Oven: Preheat your oven to 250°F (120°C). Line a large baking sheet with a silicone liner or parchment paper to prevent sticking and ensure even roasting.
- Prepare Nuts: In a medium mixing bowl, whip the egg white until frothy. Add the mixed nuts and toss well to evenly coat the nuts with the egg white, which helps the seasoning stick.
- Add Honey and Spices: Warm the honey slightly in the microwave for 10-15 seconds if it is solid to liquify it. Add the honey along with all the spices and seasoning to the coated nuts. Mix thoroughly to ensure an even coating of the sweet and spicy mixture.
- Roast Nuts: Spread the coated nuts in a single layer on the prepared baking sheet. Place in the oven and roast for 45-60 minutes, stirring every 15 minutes with a wooden spoon or spatula to ensure even browning. The nuts should become lightly browned and glossy.
- Cool and Store: Remove the nuts from the oven and allow them to cool on the sheet for at least 10 minutes. Once cool, break apart any clusters. Note that cashews may feel soft initially but will crisp up upon cooling. Store the roasted nuts in an airtight container in a cool, dry place for up to two weeks.
