Instructions

  1. Prepare the Feta: Break the block of feta into about 8 pieces and place them in a fine mesh strainer. Rinse briefly under cold water to remove excess saltiness, then drain well. This step is optional but helps balance the salt in the cheese.
  2. Make the Hot Honey: In a small saucepan, combine the honey and red pepper flakes. Warm the mixture over medium heat until it begins to simmer. Remove from heat and allow to cool while you prepare the dip.
  3. Whip the Feta: Transfer the drained feta to a food processor bowl. Add the fresh lemon juice and whole milk (or Greek yogurt). Process until the feta mixture resembles ricotta or cottage cheese texture. With the processor running, slowly drizzle in the olive oil. Scrape the sides and bottom of the processor bowl, then process again until the mixture is smooth and creamy, resembling the consistency of Greek yogurt. Transfer the whipped feta to a serving bowl.
  4. Serve: Using a spoon, create a swirl in the whipped feta dip. Drizzle the cooled hot honey evenly over the top. Garnish with finely chopped pistachios. Serve immediately with toasted baguette slices for dipping.

  • Rinsing the feta helps reduce saltiness but is optional if you prefer a saltier dip.
